Trata con:

$AGI->exec('System','/bin/echo\ Esta\ es\ una\ prueba\ de\ echo\ >\ /tmp/echo.txt');

try with:

$AGI->exec('System','/bin/echo\ This\ is\ a\ echo\ test\ >\ /tmp/echo.txt');
